Position Overview
Responsible for cutting, trimming, tenderizing, and grinding meat utilizing various tools in the Meat Department. Ensures equipment is properly assembled and maintained for daily operations. Regularly cleans and sanitizes the workspace and equipment throughout the day. Aids in wrapping meat and seafood, stocking the meat display, and organizing the showcase. Evaluates production requirements and rotates stock as necessary. Adheres to established safety protocols and standards. Maintains the sales area in optimal condition.
Key Responsibilities
- Disassembles equipment, cleans, rinses, and sanitizes removable components of machinery and the meat room.
- Inspects and reassembles equipment, addressing any issues identified from the previous operational period.
- Reorganizes the display case, ensuring merchandise is filled and rotated appropriately.
- Packs and wraps meat and seafood using both automated and manual wrapping devices.
- Labels products and places labeled/wrapped items in the display case.
- Completes necessary departmental documentation.
- Conducts weekly yield assessments.
- Follows all departmental Standard Operating Procedures.
- Adheres to Costco Meat Department's general and specific meat standards, procedures, and objectives.
- Keeps the work area clean and sanitized throughout the day.
- Complies with sanitation standard operating procedures (SSOP) for cleaning and maintaining all equipment.
- Meets the 11 commandments of Quality Assurance, Food Safety Certification, and all required training.
- Maintains compliance with health regulations by following sanitation standards and ensuring proper temperature controls.
- Stocks and rotates meat within the cooler/freezer.
- Disposes of waste from the department and work areas, operating the compactor and baler as needed.
- Transfers meat cases from the cooler to the preparation area.
- Processes meat by cutting, trimming, tenderizing, and grinding while checking fat content according to Costco specifications.
- Follows established production procedures and standards for quality and consistency of the final products.
- Assists other departments within the warehouse as required.
- Delivers prompt and courteous customer service to members, colleagues, and vendors.
Equipment Operation Skills
- Proficient in using computers, copiers, phones, band saws, tenderizers, grinders, and wrappers.
Qualifications
Education/Training:
- High School Diploma or Trade Qualification in Butchery.
Licenses/Certifications:
- Trade Qualification in Butchery.
Experience/Skills:
- Experience in butchery or a related field.
- Strong customer service, communication, interpersonal, and organizational skills.
- Problem-solving and critical thinking abilities.
- Attention to detail.
Additional Requirements
- Full COVID-19 vaccination or a medical exemption certificate.
