Junior Sous Chef Job Opportunity

Mercure Perth is seeking a skilled and motivated Junior Sous Chef to support Food & Beverage and Kitchen operations. The successful candidate will be responsible for managing daily food preparation, production, and menu implementation to deliver innovative and high-quality cuisine that meets guest expectations.

Responsibilities
  • Oversee restaurant, room service, and conference food operations ensuring consistency in quality and service.
  • Collaborate with service teams to deliver exceptional customer experiences.
  • Maintain high standards of food presentation, preparation, and cooking techniques aligned with Brand Standards.
  • Lead kitchen operations in the absence of the Executive Chef.
  • Ensure adherence to health and safety guidelines, including HACCP requirements.
  • Foster a positive work environment, supporting team development and training.
  • Coordinate with Restaurant/Bar Managers and Conference Sales teams to achieve operational objectives.
Requirements
  • Trade qualifications in cookery.
  • Previous experience in hotel or hospitality industry.
  • Strong knowledge of food safety regulations.
  • Service-oriented with attention to detail.
  • Ability to work independently and as part of a multicultural team.
  • Effective communication, interpersonal, and time management skills.
