Key Roles and Responsibilities:

Prep ingredients to assist outlets and banqueting as required. Ensure workstations are cleaned, examine freshness and quality of ingredients and communicate with the CDP of your section to determine the prep to be done for the day.

Maintain cleanliness and quality of the kitchen. This includes ensuring floors are dry and clean at all times, carrying out general cleaning as directed, sweeping and mopping up of floors, and operating pot-washing machinery.

Responsibilities include:

  • Cleaning and sanitizing food storage areas, walk-in fridges and freezers, freestanding hot and cold boxes, bain-maries, dry store cupboards and food preparation equipment as needed.
  • Conducting detailed clean and sanitizing of all kitchen areas and equipment during overnight shutdown of the kitchen areas.
  • Maintaining work schedule routine as organised by the Chief Steward / supervisor.
  • Using situational awareness and initiative to predict and fulfill all equipment and sanitation requirements of the kitchen within the scope of your duties in an efficient manner.
  • Removing all bread, milk and other crates and drums from the kitchen area on a regular basis.
  • Cleans and maintains floors and walls in kitchen and dish washing area by following standard procedures.
  • Operating pot-washing machinery and maintain a hygienic working environment in accordance with hygiene regulations and company standards.
  • Cleans and sanitizes pots, pans, utensils, and other minor equipment routinely used in the kitchen following established procedures.
  • Cleans and sanitizes dishes and related service ware following established procedures.
  • Help preparing buffet in restaurant, before food is set up and clear after service.
