Job Title: Culinary Leader
We are seeking a skilled and experienced Culinary Leader to join our team. As a key member of the kitchen, you will be responsible for managing culinary staff, ensuring high-quality food production, and maintaining a clean and safe working environment.
Responsibilities:
- Lead and supervise culinary staff, including cooks and food preparation workers.
- Inspect levels of ingredients, raw food supplies, and other raw materials to ensure optimum stock levels.
- Place orders for required supplies and make necessary requisitions for stock, frozen items, beverages, and other raw materials.
- Inspect received products for quality and quantity.
- Schedule food production and manage operations to optimize resource use.
- Assist kitchen staff in overall kitchen operations to ensure timely services.
- Observe methods of food preparation to ensure consistency.
- Assign duties based on capacity and capabilities for ingredient preparation, cooking, and delivery.
- Inspect and use cooking appliances for order completion; ensure cleanliness and usability.
- Perform inventory duties and stock rotation.
- Collaborate with management on pricing to reflect labour, ingredients, and overhead costs.
- Mentor employees, address issues, and worker grievances.
- Maintain high levels of cleanliness, organization, storage, and sanitation; ensure personal hygiene and sanitation standards.
- Ensure items are prepared within established preparation, portion control, and pricing policies.
- Manage relationships with distributors and resolve vendor issues promptly.
- Ensure safety and sanitation practices in the kitchen.
Qualifications:
- Strong knowledge and skills in authentic Indian cuisine.
- Relevant qualifications in cookery or hospitality.
- At least 2 years of experience as a Culinary Leader in a similar role.
- Ability to work with proteins like beef, mutton, and pork.
- Passion for great food and presentation.
- Understanding of and commitment to food safety.
- Experience in kitchen operations and in managing a team.
