Sous Chef Opportunity at Brisbane Airport

We are seeking an experienced Sous Chef to join our award-winning team at Brisbane Airport. This is a full-time permanent position, requiring 38 hours of work per week.

As a key member of our catering team, you will play a crucial role in planning and directing food preparation in our kitchen. Your responsibilities will include:

  • Ensuring your area is properly organized, staffed, and directed.
  • Ordering required food and equipment daily to satisfy the production plan.
  • Providing decisive leadership and on-the-job training to lower-level staff members.
  • Executing and supervising food production, packing, and tray-set activities.
  • Preparing complex meals or dishes to specifications provided.
  • Monitoring and ensuring compliance with KPIs across the business, including recipe specifications.
  • Monitoring and controlling labor, food costs, and shrinkage.
  • Participating in the development of food products and menus as needed for customer menu presentations.

To be successful in this role, you will require:

  • Demonstrated success in a similar role.
  • Trade-qualified Chef with at least 3 years' experience in a high-volume food production environment.
  • Advanced knowledge of HACCP / QSAI / Food Safety and OHS.
  • Prior experience working in airline catering and service-oriented environments.
  • Prior experience working in a team environment with demonstrated leadership skills.
  • Prior experience in a HALAL working environment and knowledge regarding segregation and separation of equipment.
  • Good financial understanding and cost-conscious approach.
  • Strong communication and organizational skills.
  • Good knowledge of Microsoft Office and Windows-based computer applications.
  • A clear National Police Check, as required by industry regulations.
