Senior Executive Chef

Bentley's Hotel in Clare, South Australia seeks an experienced and passionate Chef to lead our dynamic kitchen and drive growth in the restaurant. As a key member of the Matthews Hospitality team, you will enjoy the perks of working for a supportive and rewarding group with a professional family-owned and operated hotel business.

We are looking for someone who can contribute to profitability by increasing sales, reducing wastage, and improving efficiency in our kitchen operations. You will be responsible for managing the hotel's kitchen environment to provide the highest quality, presentation, and flavour consistently across all food areas of the venue. Your role will include planning and development of menus, creation of recipes, and ensuring compliance with local Health Department standards and hotel requirements.

Key responsibilities will include:

• Managing kitchen operations to achieve high-quality standards
• Contributing to profitability through sales growth, waste reduction, and efficiency improvements
• Maintaining a safe and clean kitchen environment
• Planning and developing menus and recipes
• Purchasing and stock control, including waste management and stock takes
• Ensuring equipment maintenance and compliance with health regulations
• Recruiting, inducting, and training kitchen staff
• Monitoring and maintaining food production standards
• Performance management of kitchen staff
• Compliance with WH& Safety laws

To succeed in this role, you must have a Certificate IV in Cookery or equivalent experience, at least 3 years' experience as a chef, and extensive proven industry experience. Additionally, you should possess strong management, communication, and organisational skills, with the ability to train, motivate, and counsel staff. A team player with excellent levels of cleanliness and organisation is essential.

The successful candidate will receive an annual salary package of $75,000 plus superannuation and enjoy excellent working conditions within our busy country hotel.
