Chef de Partie Job Description

Located in the heart of Perth city, Mercure Perth offers an exciting opportunity for a skilled Culinary Expert to join our innovative kitchen team as a Chef de Partie. This role involves working predominantly in our conferencing and events space under the direct supervision of the Head Chef.

Main Responsibilities:

  • Collaborate with the Head Chef to prepare menus and ensure adequate supplies are available for conferences and events.
  • Plan, prepare, and execute high-quality food offerings for various conferences and events, maintaining exceptional presentation standards and cost control.
  • Supervise the kitchen in the absence of senior chefs, ensuring all operations run smoothly and efficiently.
  • Maintain strict stock rotation and minimize wastage by implementing and maintaining effective stock control procedures.
  • Ensure all working areas are clean and tidy, and equipment is maintained, serviced, and cleaned to WHS standards.

Requirements:

  • Prior experience in a similar role, supplemented by relevant trade qualifications and technical expertise.
  • Experience in managing conferences and events up to 100 pax, with advanced knowledge of cooking techniques and styles.
  • Proven leadership skills, excellent communication abilities, and a strong understanding of food safety standards and HACCP.
  • A track record of delivering conference and events, with a focus on providing exceptional customer service.

About Us:

Salary Range:$60,000 - $80,000 per annum, dependent on experience and qualifications.
