We are seeking a skilled Smokehouse Cook to join our team at Frank's Barbecue Texas Smokehouse in East Victoria Park, WA. As a key member of our kitchen team, you will be responsible for preparing and creating delicious meals for our customers.
Key Responsibilities:
- Develop and implement recipes to ensure high-quality dishes
- Manage the preparation and cooking of meat, including trimming, smoking, and temperature control
- Maintain a clean and sanitary workstation
- Oversee the cooking process in the barbecue pit
- Perform routine maintenance on the smoker
- Optimize meat placement for optimal results
- Tenderize meat to perfection
- Ensure accurate portioning for customer orders
- Store food properly to minimize spoilage and wastage
- Assist in planning special menus based on seasonal product availability
Requirements:
- Proven work experience as a Cook/Chef
- Minimum 2 years of experience working as a Cook/Chef in a smokehouse
- Minimum 2 years of experience as a supervisor in the kitchen
- Minimum 2 years of experience in making schedules, costing, and organizing events
- Ability to lift 25 kg and work in various temperatures
- Excellent knife skills and knowledge of BBQ techniques
- Hands-on experience with kitchen equipment
- Advanced knowledge of culinary, grilling, smoking, and pastry techniques
- Leadership skills and ability to remain calm under pressure
- Excellent time management abilities
- Up-to-date knowledge of cooking techniques and recipes
- Familiarity with sanitation regulations
- Australian Trade qualifications (Certificate IV in Commercial Cookery or similar)
