About the Role:

Hamilton Island is seeking a highly skilled Culinary Director to lead our award-winning Bommie Restaurant. As the Head Chef, you will be responsible for overseeing the creation and execution of à la carte and tasting menus, ensuring consistency and excellence in every dish.

Key Responsibilities:

  • Lead and inspire a team of experienced chefs to deliver innovative, high-quality dishes with a focus on fresh, seasonal, and local ingredients.
  • Manage kitchen operations, including inventory, ordering, and cost control, while maintaining the highest standards of hygiene and safety.
  • Collaborate with management to maintain and enhance our premium dining experience, ensuring the Bommie Restaurant remains a top destination for guests.
  • Curate special menus and seasonal offerings that align with the restaurant's commitment to contemporary Australian cuisine.
  • Work closely with our sommelier to pair dishes with selections from our premium wine list, showcasing the best of Australian wines and champagne.

Requirements:

  • Proven experience as a Head Chef in a high-end, fast-paced restaurant environment.
  • A passion for contemporary Australian cuisine and a strong understanding of seasonal and locally-sourced ingredients.
  • Excellent leadership and communication skills, with the ability to inspire and motivate a team.
  • Strong organizational and time management skills, with a keen eye for detail.
  • Certificate III in Commercial Cookery or Equivalent (Essential)
  • Current Food Safety Supervisor (Essential)
  • Minimum 5 years' experience in Head Chef position
