We are seeking a Head Chef to lead our culinary team and deliver exceptional dining experiences to our Defence personnel.

About the Role

The successful candidate will be responsible for overseeing daily mess meals and events, maintaining catering and stock controls, and ensuring compliance with OH&S and HACCP standards. They will also be responsible for forecasting food requirements, ordering, and stock control, as well as driving exceptional food safety and quality.

Key Responsibilities
  • Maintain all catering and stock controls, including OH&S compliance and HACCP;
  • Forecast food requirements, order, and manage stock levels;
  • Drive exceptional food safety and quality, with a focus on allergen and dietary requirements;
  • Collaborate with the team to deliver a premium experience across daily mess meals and events.
Requirements

To be successful in this role, you will need:

  • A Certificate 3 in Commercial Cookery;
  • 3+ years' experience as a head chef in similar venues;
  • High level knowledge of operational and financial performances of defence business;
  • Comfortable with people management, training, and developing;
  • Proven team leadership skills, with high level organisational skills who can work autonomously, with initiative, and under pressure.
