Responsibilities

- Prepare ingredients and mise en place for cooking, including chopping vegetables, portioning meat, preparing stocks, and other essential components for daily meal production.
- Cook and prepare meals as per menu specifications and recipes, ensuring consistency in taste, presentation, and quality.
- Coordinate food production in collaboration with other kitchen staff, ensuring smooth workflow and minimizing service delays.
- Manage kitchen timeframes, ensuring food is cooked and served within the required time limits, especially during peak hours.
- Strictly adhere to Australian food safety standards and Work Health and Safety (WHS) regulations, including proper food storage, handling, and sanitation practices.
- Conduct regular cleaning and sanitization of kitchen surfaces, equipment, and utensils to maintain hygiene standards.
- Monitor inventory levels of ingredients and kitchen supplies, maintaining a stock system to minimize waste and ensure timely ordering.
- Assist in ordering supplies and managing stock rotation, ensuring that all products are used in accordance with their shelf life to prevent wastage.
- Follow standardized recipes and menu guidelines to maintain consistency in food quality and presentation.
- Modify dishes as needed to accommodate dietary preferences or allergies, such as gluten-free, vegetarian, or vegan options, ensuring customer satisfaction and safety.
- Work closely with other kitchen staff, including chefs, kitchen hands, and waitstaff, to ensure seamless communication and collaboration during service.
- Assist with the management of food costs, ensuring that all dishes are prepared according to portion control standards to minimize wastage and optimize profit margins.

Qualifications

- Cert III/IV in Commercial Cookery (or equivalent qualification)
- 1-2 years of experience as a Cook in a restaurant setting
- Proven experience as a Cook specialising in Sri Lankan cuisine.
- Strong understanding of Sri Lankan dishes and ingredients.
- Ability to work independently and as part of a multicultural team.
