We are seeking an experienced and dynamic Restaurant Manager to lead the food and beverage operations at Jamala Wildlife Lodge, Canberra's premier luxury lodge offering exceptional dining and immersive wildlife experiences. As Restaurant Manager, you will be responsible for overseeing all aspects of the restaurant's daily operations, ensuring that our guests receive a world-class dining experience aligned with the Lodge's premium brand. You will manage a talented team of service staff and work closely with the Head Chef and senior management to maintain high standards of food quality, service, and operational excellence.We are looking for a hands-on leader with proven experience in high-end hospitality, strong team management skills, and a commitment to excellence.

- Overseeing day-to-day operations of the restaurant (services include breakfast, lunch, afternoon and dinner service and any ad hoc requests for last minute meetings and events)
- Hiring, training, and managing staff
- Maintaining high standards of customer service
- Ensuring compliance with food safety regulations
- Assist our Head Chef in developing and implementing menus
- Ordering and managing beverage and food inventory
- Monitoring and controlling beverage, labour, and operational costs
- Maintaining a clean and organised work environment
- Providing excellent customer service and handling customer complaints
- Developing and implementing new strategies and ideas, as well as managing the associated budget, in collaboration with senior management
- Coordinate with Jamala Reception to obtain details on upcoming bookings, including dietary requirements and special requests
- Adhere to council/legislative regulations and uphold food handling and presentation hygiene standards as outlined in the hotel's Food Safety Plan

Qualification & experienceQualification & Experience

- Proven experience of 3 years in restaurant management or luxury restaurant management.
- Tertiary diploma or higher in hospitality or related field.
- Previous restaurant/fine-dining operations experience in an international luxury hotel or resort.
- Australian citizens and permanent residents are preferred.
