**ABOUT THE ROLE**:
**KEY RESPONSIBILITIES**:

- Conduct stunning and killing of livestock in compliance with humane handling requirements.
- Prepare carcasses for further processing by removing internal organs, hides, and inedible parts.
- Operate machinery to direct and drop carcasses and meat cuts to appropriate processing areas.
- Cut meat to separate meat, fat, and tissue from bones and to create standard meat cuts (e.g., rumps, flanks, shoulders).
- Ensure cleanliness by washing, scraping, and trimming foreign material and blood from meat.
- Remove internal fat, blood clots, bruises, and other unsuitable materials to prepare meat for packing and marketing.
- Operate restrainer and stunning equipment safely and effectively.
- Sever jugular veins to drain blood and facilitate dressing, maintaining adherence to health and safety guidelines.
- Perform trimming, head meat removal, and severing of animal heads with precision.
- Carry out slitting, evisceration, and trimming of animal carcasses.
- Adhere to religious slaughter procedures as required.

**REQUIREMENTS**:

- Australian citizens and permanent residents are encouraged to apply.
- Minimum of AQF Certificate III in Meat Processing (Meat Safety) or equivalent.
- At least 3 years of experience working as a Skilled Meat Worker.
- Demonstrated ability to work effectively in a team.
- Commitment to maintaining health, safety, and hygiene standards within the workplace.
- Proficient in various meat processing techniques and familiar with meat cuts.
- Capable of operating meat processing equipment safely.
- Strong understanding of hygiene and sanitation principles related to meat processing.
- Ability to work quickly and efficiently with attention to detail.
- Physical fitness and ability to stand for extended periods.
- Good communication and teamwork skills.
