**About the role**

We are looking for a qualified Pastrycook / chef who is passionate about Viennoiserie to join our talented and hard working team. This is a full time position Tuesday - Saturday including public holidays, 6am / 8am start.

Minimum 1 years experience operating a pastry laminator is essential.

The position is hands on and you will be involved in all facets of Pastry production including mixing, lamination, rolling, baking and finishing. You will work alongside an experienced team to produce croissants, doughnuts, small cakes and sweet breads to a high standard every day.

**Job tasks and responsibilities**
- laminate and roll by hand a large volume of croissant dough to a consistently high standard to produce delicious Viennoiseries
- preparing, mixing, baking and finishing of products to specified guidelines and time frames
- maintain a high standard of quality and consistency
- operating dough laminator, blast freezer, mixers, rack ovens and other pastry related equipment
- support the Head Pastry Chef with new product ideas and testing
- adhere to a stringent GMP & HACCP programme
- general duties as required incl. cleaning and maintenance

**Skills and experience**
- able to demonstrate through prior experience the process and techniques involved in lamination, folding, rolling and baking of croissant dough
- an eye for detail with an appreciation of high quality pastry products using premium ingredients
- strong organisational and time management skills
- excellent food hygiene standards and an understanding of HACCP
- demonstratable skills in showing initiative and a passion for the industry
- excellent physical fitness and able to stand, bend and lift heavy items
- a positive attitude and willingness to work as part of a committed team
