**Restaurant Hubert is looking for an experienced Sommelier to join our team of wine professionals. In this role you will assist in the explaining, selling and serving of our extensive beverage list and should be comfortable providing world class service to our eclectic clientele; from the wine novice to the aficionado, everybody should have a magical experience.**

Restaurant Hubert is one of downtown Sydney’s busiest and most loved venues. We offer classic French cuisine, an extensive international wine list and showcase some of the city’s finest live jazz music.

You will also work closely with the Head Sommelier to further develop our culture of knowledge and enthusiasm around wine. Our wine focus is on classic, small volume, French and Australian producers, while still remaining enthusiastic about discovering talented new winemakers and bottlings of anything that’s truly delicious.

We're seeking an experienced Sommelier to join our team and continue to offer exceptional service, whilst assisting in managing and serving our list of over 600 wines. In addition, we require someone who is excited to guide our floor team with further learning, tastings and mentoring.

As part of Swillhouse, (Alberto's Lounge,The Baxter Inn, Shady Pines Saloon and the soon to open Le Foote) we have strong group buying ability and access to rare allocations, along with great relationships with Australia's best importers.

This is the perfect position for an experienced sommelier looking to further their career alongside a passionate and collaborative team of industry professionals.

Your key duties and responsibilities will be, but are not limited to:

- Responsible for the entire guest experience at the venue, with a particular emphasis on delivering exceptional service and maintaining high standards for the presentation of wine.
- Managing day-to-day operations of the business
- Cultivating and maintaining relationships with key stakeholders
- Ensuring effective management of cellar stock, including ordering, receipting, storing, and rotation
- Following monthly targets set and meet venue sales budgets and profit expectations, with a focus on increasing spend per head
- Fostering personal growth and development
- Contributing innovative ideas to the sommelier team and collaborating on the curation of new wine lists
- Providing support to the senior sommelier team
- Sharing knowledge and upskilling the wider venue operations team in wine.

Qualifications/Experience required:

- Minimum three years overseeing a busy wine section in a restaurant recognised for its wine list, wine service and culture
- An in-depth understanding of the wine regions of the world, including old world, new world and emerging regions.
- A comprehensive knowledge of quality producers from all regions and styles

Ability to train non-wine focussed staff in the basics of selling, serving and tasting wines
- Comprehensive knowledge of both conventional and natural winemaking techniques and styles

We are offering a competitive salary of $70,000 - $75,000 plus superannuation, weekly tips along with one of the best employee benefits packages available in the industry.
