**PURPOSE OF THE POSITION**

Responsible for selecting, cutting, trimming, or preparing meats according to the sizes preferred by the consumers using knives, butcher's cutlery, and powered equipment.

**RESPONSIBILITIES AND DUTIES**
- Select and prepare meat by cutting, mincing, grinding pieces of meat to small goods.
- Cut, trim fat, debone, and prepare meats to specification of customer’s orders as to shape and size.
- Mix spices to create seasonings, marinades, pickles, cure, crumbs, and other meat dressings.
- Provide service to customers and advise customers on storing, preparing, and cooking meat or fish, or on estimating food portions.
- Sharpen and adjust cutting equipment.
- Operate butcher's cutlery and coking kettles and vats as well as powered equipment like grinders, mincer, packaging machines, mixer, tenderiser etc.
- Weigh, wrap, and display cuts of meat.
- Receive, inspect, and store meat upon delivery.
- Store meats in refrigerators or freezers at the required temperature.
- Price meat and other food production costs and place meat or fish cuts and products in display counters.
- Keep inventory of meat sales and order meat supplies as well as assist in menu planning and scheduling.
- Clean equipment and work areas to maintain health and sanitation standards.

**ACADEMIC AND TRADE QUALIFICATIONS**:
Minimum Certificate III level qualifications including at least 2 years of on-the-job training, or AQF Certificate IV along with 2 years of relevant work experience. In the absence of formal qualifications, 3 years of work experience in similar position will suffice.

**WORK EXPERIENCE AND SKILLS**:

- Exceptional knife skills
- The ability to work quickly and efficiently while maintaining a safety first approach
- Excellent time management
- The ability to work as part of a team or unsupervised
- Experience in small goods production would be highly advantageous

**Job Types**: Full-time, Permanent

**Salary**: $70,000.00 per year
