**About the Role**:
The role will be primarily responsible for driving innovation, creating, and delivering new products to market concepts for major retail, export, and foodservice customers in line with KB Seafood Co’s product strategy pipeline.

The position will be Permanent Full Time and based in Mulgrave, Victoria.

**Responsibilities**:

- Driving innovation by developing, and delivering new seafood products, improving existing ones, and setting standards for producing, packaging, and marketing seafood.
- Ensure that new seafood products developed meet all food safety, quality, and regulatory compliance requirements from concept to launch, while optimising of process, packaging, and existing products, in an efficient, cost effective, safe and timely manner.
- Cross functional engagement with commercial, quality, procurement, marketing, production, and account management teams to determine product feasibility, critical product launch paths and ensure smooth launch of projects.
- Create and complete recipe cards, product attribute sheets and product specifications for new products.
- Provide labelling and nutritional information, ensuring all legal requirements are met on packaged seafoods, as detailed in the FSANZ foods standards and in conjunction with the QA team.
- Develop packaging design in coordination with Artwork Coordinator and ensure labelling meets regulatory compliance.
- Analyse and evaluate trial results, making necessary adjustments to ingredients, formulations, processes, and equipment as required.
- Implement GS1 standards to create efficient value chains.
- Communicate updates and progress and liaise regularly with respective stakeholders.
- Ensure all work meets in-house, food safety legislation and customer specifications for quality and safety.
- Schedule and manage production line trials and revaluations.
- Liaise with Quality team to ensure HACCP plans are created, updated or in place before production; prepare and ensure sign off for specifications in a timely manner.
- Ensure that operating procedures and specifications are written correctly for each new product and available to relevant staff.
- Support initial production runs and be available to trouble shoot and provide expert advice if necessary.
- Track performance of new products, schedule post-launch reviews and annual reviews to assess product viability.

**Qualifications and Pre-requisites**:

- A degree in Food Science, Food Technology, Nutrition or equivalent.
- HACCP Certification.
- Full Australian working rights

**Experience and Skills**:

- Minimum of 5 years' experience in product development within a seafood manufacturing facility.
- Excellent knowledge of Whichfish and FIP (Fishery Improvement programs).
- Sound knowledge on ethical and social compliance requirements.
- Experience in trend analysis and producing commercially viable products.
- High level of expertise and competency in seafood processing technologies.
- Experience in packaging development and design; good level of knowledge of Australian food regulation and labelling requirements.
- High level of computer literacy including Microsoft Office suite.
- Excellent written and spoken communication skills.
- High level of attention to detail, focused and reliable.
- Excellent organisational, multi-tasking and inter-personal skills.
- Ability to work with mínimal supervision.
