Norma's is an always-on banquette of food and drinks. It's a one-stop destination for takeaway goods when a legion of friends come over for a Sunday late lunch or a revolving deli offering for a mid-week meeting at the bar. The menu is influenced by Greek flavours but expands its repertoire to include Mediterranean-style dishes; think jam-packed sandwiches on freshly baked bread and a lemon tart to finish. Norma’s is best-in-class when it comes to a Deli concept, as the pre-prepped food cabinet sits alongside the live kitchen, bakery and bar. The onsite sourdough bakery will operate alongside a rotisserie, with fine deli meats being cut on order. The Deli operates from morning to night, offering the Manly locals and visitors a reliable option when it comes to any food and drink occasion. Whether you are visiting for the first time or a frequent patron, Norma’s will become synonymous with the overall beachside experience.

**About the Opportunity**:
The Senior Baker will be responsible for leading the bakery in partnership with the Head Baker, to service excellence. This role is part of our leadership team and is critical in innovating and maintaining a menu that pushes the boundaries while honouring the Greek influence to delight the senses of our guests.

**A typical day looks like**:

- Support the Head Baker to continually innovate a bakery styled conceptual menu that pushes the boundaries
- Lead and develop bakery and pastry staff, providing ongoing training
- Stay current on restaurant industry trends, new products and suppliers to contribute to Norma’s evolutionary
eatery experience
- Supporting the day to day control of food production, including stock control and food quality
- Directing the food preparation process and delegating tasks
- Baking and preparing high quality dishes
- Assisting the Head Baker to create menu items, recipes and develop dishes
- Supervising all bakery section
- Supervising, motivating and working closely with other Chefs of all levels
- Ensuring food quality and excellent standards are maintained for all dishes created
- Assisting with determining food inventory needs, stocking and ordering
- Compliance with hygiene standards; and
- Ensuring culinary standards are met
- Working in a dynamic environment with a fast-paced approach to all aspects of F&B operation.
- Communicating with bakery staff on bakery item requirements
- Oversee the daily operations within the bakery
- Possess a love of baking and a passion for bread and pastries.
- Be willing to learn and excel in your profession.
- Be familiar with a busy production output.
- Have some knowledge of HACCP quality systems and be quality focused.
- Train and up skill new team members.
- Have excellent communication skills.
- Time management skills.

**Job Types**: Full-time, Permanent

**Salary**: $65,000.00 - $75,000.00 per year

**Experience**:

- Baking: 2 years (preferred)
