We are a small busy neighbourhood “Italian Street Food and Pizza Bar” on the corner of Bendigo Street and Malvern Road Prahran. We seek an experienced Pizzaiolo’s Assistant that has minimum 1 year of proven pizza making experience in a pizzeria to participate in all aspects of our pizza making operations and to provide general assistance in our kitchen (pastas, other menu items, kitchen hand) starting Tuesday 15 August 2023 or earlier this coming week:
4pm - 9.30pm, Wednesdays to Saturdays

**About the role**:
The role of Pizzaiolo’s Assistant (incl general assistance - pastas, other menu items, kitchen hand) is to assist our Lead Pizzaiolo and Chef to prepare our 13” pizzas and all other food items on our evening Menu to our traditional recipes, to work alongside our kitchen and FOH team to maintain a good flow of service and high quality outputs even in our busiest times and to ensure that the pizza making area, pizza making equipment and utensils and the kitchen work environment and equipment is always adequately stocked, clean and compliant with food premises and workplace safety legislation.

**Daily operations of this position will be to assist the Lead Pizzaiolo and Chef in all aspects of the pizza making process from start to finish including**:

- responsible for the complete set-up and replenishment of the piazza making area before commencement of service (all ingredients, equipment, utensils, packaging, etc) and at the end of service in readiness for the morning shift,
- assisting with the preparation of the dough, rolling, storing and maintaining the dough balls prior to, during and after service as required,
- assisting with the prep of all the various pizza toppings to our recipes and requirements including cured meats, cheeses, vegetables, sauces, creams, etc and that all are always properly stored and labelled to our requirements,
- assisting with all aspects of the preparation of the ordered pizzas (including hand stretching the dough, topping, baking, final dressing to our set recipes and requirements and boxing for take away, plating up for dining in) in full co-ordination with the menu items being prepared in the kitchen by others to ensure correct timing of orders with the FOH,
- being responsible for the constant and high level of cleanliness required of the pizza oven, all pizza making tools, equipment, utensils including the dough mixer and for the pizza making area before and after service,
- being closely familiar with our recipes and ingredients to participate in stock control activities to ensure adequate supplies of the pizza related ingredients are always on the premises and prepp’d ready at hand for each evening service - also to ensure that our freezers, fridges and dry stores are all properly stocked to our requirements,
- experienced in and constantly practice safe food handling and cleanliness to our high standards and in accordance with applicable legislation at all times,
- carry out all cleaning tasks in the pizza making area (and in the kitchen as required) prior to, during and after service - being responsible for ensuring that the pizza making area is always clean and compliant with food premises and workplace safety legislation and all other applicable legislation,
- ensure all the pizza making equipment is operational - promptly report any issues to the business owner,
- work well under pressure and in a fast-paced environment paying attention to detail to produce high quality outcomes consistently
