JWE Australia II Pty Ltd in Yarra Glen is seeking an experienced and enthusiastic person to join our team as Winemaker/Oenologist.

Responsible for assisting in the winemaking process. This includes overseeing the implementation of winemaking specifications, subsequent and routine laboratory analysis during the fermentation, ageing and blending process.

You will be contributing to create world class wines through a culture of maintaining wellbeing, accountability, uncompromising detail, a cohesive team and innovative growth.

This is a full-time and permanent position, working Monday to Friday.

**Key responsibilities and objectives**:

- Liaise and communicate with Winemakers to ensure winemaking is of the highest possible standard.
- Provide continual winemaking analysis and communicate with Winemakers on progress and challenges.
- Prepare samples to be tasted, and prepare and present possible blends/treatments as instructed.
- Maintain cellar equipment hygiene and sanitation to the highest possible standard. (Anything that touches grapes or wine)
- Facilitate grape maturity analysis in a timely and accurate manner
- Scheduling and allocating fermentation tank space, producing receival work orders in line with winemaking protocols. Ensuring corresponding lab analysis is completed in a timely fashion.
- Produce the daily fermentation sheet and procedures.
- Direct the barrel preparation and filling as per the established barrel plan. Maintain bung maintenance, outer cleanliness, stirring, topping, rack and return schedule as per winemaking specifications.
- Responsible for monitoring the finalisation of fermentation, predicting problems prior to them actually happening, and manage temperature and storage vessels accordingly. Monitor malolactic fermentation until dryness, and ensure preservative is added in a timely fashion. This takes priority over all other operations in February to May.
- Maintain monthly laboratory analysis. Keep laboratory equipment maintained and appropriately calibrated.
- Maintain winery documentation and operating system (Vintrace) up to date daily. Record all analysis on operating system other than fermentation records.
- Assist in maintaining Standard Operating Procedures for Laboratory and Cellar
- Remain up to date with industry and technology developments.
- Other duties as required by the Senior Winemaker.

**What we need from you**:

- A bachelor or post graduate qualification in Winemaking/Oenology
- A high level of accuracy with recording numbers and completing documentation.
- 5+ years working in the wine industry.
- Vintage experience
- Hold a current forklift licence
- Have a working knowledge of Health & Safety in the workplace
- Be able to work under pressure, have great prioritization and time management skills
- Vintrace Systems knowledge is highly favourable

**Salary**: $70,000.00 - $80,000.00 per year
