What You'll Be Part Of

• Leading and mentoring a skilled bar team in a high-end, service-focused environment.
• Designing and delivering a sophisticated cocktail program that reflects seasonal ingredients and pairs seamlessly with Japanese cuisine.
• Overseeing stock control, inventory, and ordering to maintain a carefully curated menu of spirits, wines, sake, and cocktails.
• Ensuring every guest receives warm, personalised, and memorable service aligned with the high standards of fine dining.
• Fostering a calm, collaborative, and high-performing team culture behind the bar.
• Maintaining compliance with RSA regulations and upholding the highest standards of cleanliness, presentation, and professionalism.
  
  

Is This You?

• An experienced leader from a premium or fine-dining bar environment, with a strong understanding of refined service and attention to detail.
• Skilled in cocktail creation and beverage pairing, with knowledge of Japanese spirits, sake, and bar techniques highly regarded.
• Calm under pressure, highly organised, and committed to excellence in both service and operations.
• Passionate about hospitality, with a desire to continually evolve and refine the guest experience.
• Flexible with availability—particularly for evenings, weekends, and public holidays, when the restaurant is at its peak.
