We have an exciting opportunity at Lilianfels Resort and Spa for a Sous Chef to lead and inspire our talented kitchen team at The Lounge Bar.

The Lounge Bar offers a gourmet all-day dining menu and an elegant high tea, showcasing the best in seasonal, local, and regional produce.

Reporting to the Executive Chef, you will be an integral part of delivering our bespoke and personalized experience to our guests, whether for conferences, leisure groups, or our dining offerings.

Located in the heart of the World Heritage Listed Blue Mountains National Park, just a 90-minute drive from Sydney CBD, Lilianfels Resort & Spa features 85 rooms, multiple food and beverage outlets, a 13-meter heated outdoor infinity pool, a 10-meter indoor pool, sauna, and spa.

Here's what you'll do

  • Assist our Executive Chef in planning and executing seasonal menus that highlight regional produce and align with the Lounge Bar's culinary vision;
  • Supervise and coordinate kitchen operations, ensuring food preparation and presentation meet the highest standards;
  • Lead by example in maintaining hygiene, safety, and cleanliness in accordance with HACCP and NSW Food Authority regulations;
  • Train, mentor, and motivate junior kitchen staff, fostering a culture of teamwork, creativity, and continuous improvement;
  • Monitor stock levels, assist with ordering, and manage stock rotation to minimize waste and control food costs;
  • Collaborate with front-of-house teams to ensure seamless service and guest satisfaction;
  • Oversee the Lounge Bar in the absence of the Executive Chef, maintaining consistency and leadership.

This is how you'll know you're right for this role

  • Previous experience as a Sous Chef in a high-end, à la carte restaurant environment is essential;
  • A commitment to leading, training, and developing a small team;
  • An understanding of all back-of-house operations including ordering, stock takes, rostering, menu planning, and financials;
  • A creative mindset and desire to collaborate on upcoming menus;
  • Ability and willingness to work on a rotating roster including weekends and public holidays (essential);
  • Located close to our restaurant or willing to relocate.
