Base pay range

$100,000.00/yr - $150,000.00/yr

Role Overview

We are seeking a seasoned product development leader to spearhead the end-to-end innovation and industrialization of nutraceutical gummies and pastilles. This pivotal role bridges cutting-edge R&D with scalable commercial manufacturing, overseeing everything from formulation and pilot trials to process optimization and regulatory compliance. The ideal candidate brings deep technical expertise in gummy development, process engineering, and regulatory affairs, with a passion for transforming functional ingredients into market-ready products.

Key Responsibilities

• Drive the development of functional and nutraceutical gummies and pastilles incorporating a range of active ingredients such as vitamins, minerals (e.g., magnesium), botanicals, probiotics, collagen, and specialty compounds.
• Select and optimize gelling agents to meet product texture, shelf-life, and health claim objectives.
• Address formulation challenges such as ingredient interaction, taste masking, encapsulation, and moisture migration.
• Conduct iterative formulation trials to refine texture, flavor, appearance, and active release using both sugar-based and sugar-free systems.

Pilot Trials & Scale-Up Execution

• Design and lead lab- and pilot-scale trials to validate formulations and processing parameters.
• Analyze data from trials to assess technical feasibility, reproducibility, and commercial scalability.
• Partner with engineering teams to develop cost-effective and robust manufacturing protocols.
• Define and optimize Critical Process Parameters (CPPs) and Critical Quality Attributes (CQAs).

Process Engineering & Continuous Improvement

• Lead ongoing optimization efforts across cooking, depositing, demoulding, drying, and packaging processes.
• Introduce automation and in-line controls to enhance product consistency and reduce variability.
• Conduct root cause analysis and implement corrective actions for technical or quality deviations.

Regulatory & Quality Compliance

• Ensure compliance with applicable regulatory standards (TGA, FSANZ, cGMP, HACCP, etc.).
• Oversee technical documentation, ARTG listings, and substantiation for functional claims.
• Support QA/QC functions in ingredient validation, shelf-life studies, allergen management, and microbial safety protocols.

Cross-Functional & External Collaboration

• Collaborate with procurement to source high-quality actives, excipients, and flavors.
• Engage cross-functionally with marketing, packaging, and regulatory teams to drive cohesive product development.
• Manage relationships with toll manufacturers, suppliers, and technical consultants to ensure timely project execution.

Technical Leadership & Knowledge Sharing

• Provide hands-on technical training to production teams and mentor junior scientists.
• Lead technical reviews, risk assessments, and stage-gate approvals for new product development pipelines.

Required Experience and Skills

• Proven expertise in active delivery within chewable formats, including taste masking and interaction mitigation.
• Experience with diverse actives: water-/fat-soluble, heat-sensitive, and hygroscopic compounds.
• Knowledge of encapsulation techniques for stability and controlled release.
• Strong understanding of flavor science, sensory design, and consumer expectations in functional products.

Manufacturing & Equipment Proficiency

• Familiarity with gummy production equipment: batch/vacuum cookers, servo depositors, demoulders, oilers/polishers, and drying tunnels.
• Skilled in resolving production challenges such as sticking, crystallization, water activity, and curing optimization.

Regulatory Acumen

• Deep understanding of nutraceutical regulatory landscapes in Australia (TGA, FSANZ) and international markets (FDA DSHEA, EFSA).
• Experienced in preparing technical documentation for audits, listings, and regulatory submissions.

Qualifications & Experience

• Bachelor's or Master's degree in Food Technology, Pharmaceutical Sciences, Chemical Engineering, or related field.
• 5–10 years of experience in nutraceutical or functional confectionery development, with hands-on gummy or pastille expertise.
• Demonstrated track record of leading products from concept to commercialisation in a regulated manufacturing environment.
