Sydney Princess Cruises, established in 2001, is one of Sydney's leading private charter boat operators on Sydney Harbour, offering services for private, corporate, tourism, special events, and whale watching.

We currently have a full-time vacancy for a skilled and experienced cook.

To be considered for this role, you must have:

  • An AQF Certificate III with 2 years of on-job training or a Certificate IV or higher qualification.
  • Or at least three to four years of relevant experience to substitute for formal qualifications.
  • Full-time working rights in Australia.

Key Responsibilities:

  1. Assist the Head Chef in developing new seasonal and event-based menu items tailored to the cruise experience, considering ingredient availability, preparation complexity, and overall cost including labour.
  2. Support inventory management by assisting in the ordering, receipt, and monitoring of food supplies to ensure uninterrupted operations during scheduled cruise services.
  3. Inspect supplies, equipment, and work areas for cleanliness and functionality.
  4. Prepare, cook, and present meals in accordance with the cruise menu, demonstrating expertise in portion control, consistency, and end-to-end food production within a high-volume galley environment.
  5. Maintain quality of all menu items at all stages of cooking and preparation.
  6. Season dishes during preparation and cooking according to standardised recipes or guest preferences, ensuring flavour consistency and customer satisfaction.
  7. Ensure visually appealing plating and consistent presentation of meals that meet the Sydney Princess Cruises brand and guest expectations.
  8. Train new cooks and kitchen staff on different cooking techniques and methods.
  9. Check and maintain temperature for equipment like ovens and grills.
  10. Participate in galley team meetings, contributing to discussions on menu enhancements, food preparation standards, and staff training needs.
  11. Prepare dishes according to dietary requirements if specified.
  12. Assist management with training support staff and other kitchen personnel as needed.
  13. Ensure all food is stored and prepared in accordance with standards, using standardized recipes, and complying with regulatory requirements, including Food Safety standards.

The ideal candidate will possess excellent multitasking, creativity, and culinary skills.

Salary: $75,000 - $85,000
