Hawaiian Cable Beach, Broome, Western Australia, invites applications for the role of Executive Sous Chef at Cable Beach Club Resort & Spa. The property features 225 rooms, 4 restaurants, poolside bars, tour desk, Resort Shop and Day Spa. Location: Cable Beach, Broome, WA.
Responsibilities- Balance personal preparation of high quality food with supervising and directing all kitchen personnel.
- Interact with internal and external customers and suppliers.
- Ensure product quality and service standards are consistently high.
- Work with the Executive Chef on menu creation.
- Train and develop up to 40 employees – Chefs, Apprentices and other kitchen staff.
- Ensure compliance with workplace health and safety requirements at all times.
- Control and analyze departmental costs on an ongoing basis.
- Devising initiatives and strategies to ensure financial targets are met.
- Formal qualifications in Commercial Cookery or equivalent.
- Experience in middle to upper level management within a large 4 or 5 star Hotel/Resort.
- Experience working in a multi-outlet Hotel/Resort is preferred but not essential.
- Thorough knowledge of Food Safety and other workplace health and safety practices.
- A current WA motor vehicle driver's license.
