Position Overview:
We are seeking a passionate and skilled Malaysian & South Indian Chef to join our hospitality team in Cairns. This position requires in-depth culinary knowledge of both Malaysian regional cuisines (Malay, Indian-Malay, Mamak-style) and South Indian dishes (Chettinad, Tamil Nadu, Kerala), with the ability to deliver traditional authenticity and innovation in a commercial kitchen.
You will be responsible for managing all aspects of kitchen operations related to these cuisines – from ingredient sourcing and menu creation to food preparation, team training, and compliance.

Key Responsibilities:
Plan, prepare, and cook a variety of authentic Malaysian and South Indian dishes
Develop and update menus in line with seasonal produce and customer preferences
Maintain food quality, consistency, and presentation to high standards
Supervise kitchen staff and train junior chefs on authentic techniques and recipes
Ensure food safety, hygiene, and OH&S compliance at all times
Monitor inventory and manage ordering of specialty ingredients
Coordinate with front-of-house to manage service times and customer satisfaction
Innovate on menu presentation and accommodate dietary/customisation requests

Required Skills & Experience:
Minimum 3 years' experience in a commercial kitchen (chef or sous chef level)
Demonstrated expertise in:
Malaysian dishes (nasi lemak, sambal, kari ayam, rendang, roti canai, satay)
South Indian dishes (dosa, idli, vada, chettinad curries, sambar, rasam)
Culinary qualification or trade certification (desirable but not essential)
Ability to lead a team and handle high-pressure environments
Good understanding of food cost management and portion control
Strong communication and time management skills
Familiarity with Halal, vegetarian, and gluten-free variations (preferred)
