The Venue

Coogee Pavilion's middle floor boasts 3 different options, will's Cocktail Bar, Una Mas tapas wine bar and mimi's dining room, that looks like it's been plucked straight off the European coastline. Each space has its own unique identity, creating exceptional food and drinks and unforgettable experiences, right on the doorstep of Coogee's sun-soaked coastline.

At mimi's the kitchen is at the heart of the restaurant with a fully open concept. The menu headed up by Jordan Toft is inspired by the best seasonal and local produce, pulling on flavours from the Med and Europe, with an interior to match.

The menu is complemented by one Australia's most respected and extensive wines lists and this is your opportunity to take the helm.

The Role

In this role you'll be given the opportunity to use your creativity, introduce new and unique offerings to the wine list and take charge of the wine program for one of Merivale's most treasured venues.

Working closely with the Group General Manager – Beverage, Franck Moreau MS and Head of Wine, Dorianne Neimard. You will inspire, lead, and mentor a team of over 8 high performing Sommeliers.

You will also collaborate with the Restaurant Management team delivering exceptional guest service we well as driving revenue and cost results.

This is a critical role with Merivale's sommelier group, you'll set the standard for world-class service and share your wine knowledge with esteemed guests to ensure their experience at mimi's is one they'll never forget.

To be successful in the role, you will have:

• previous Head Sommelier experience within a similar high-end restaurant environment
• enjoy working with extensive wine lists
• be an inspirational leader with a proven track record of developing and mentoring the other Sommeliers within your team
• have a thirst for knowledge and growth
• a passion for providing the customer with an outstanding experience.
