The Congrats Food Group, consisting of Poodle Bar & Bistro and Rocco's Bologna Discoteca, are on the hunt for a Head Wine Buyer to oversee the beverage program for both venues.

Working alongisde our group Beverage Director, this job involves

We are a multi-faceted venue, so there is always a new challenge around the corner. Both Poodle and Rocco's includes the bistro, public bar, event spaces and large heated courtyard.

Poodle wine list is Euro-leaning with modern interest, with more new and intresting grape varieties and styles. We have also included a couple of Aussie classics for good measure. Rocco's focuses on great Italian winemakers with splashes of Australian friends throughout. The amari list is extensive and something we are super proud of.

Your role would include:

  • Regular and ongoing wine and service training
  • Maintaining the strong beverage culture that exists throughout our businesses
  • Training in cellar management and wine list development
  • Back of house systems and processes including invoicing, wine list construction and formatting
  • Supplier meetings evolving an ever changing list


This is a modern day somm role - we carry plates and mix drinks whilst we keep the wine flowing.

When you're not recommending that perfect wine to the guest, you will be learning to control and manage stock, train staff and to maintain a strong beverage culture within the team.
